Potatoes, Beans And Peas With Garlic Ingredients (serves 6)
- 300g fresh or frozen peas
- 300g thin green beans, trimmed
- 2.2kg kipfl er potatoes, peeled
- 1/3 cup (80ml) olive oil
- 2 garlic cloves, finely chopped
- Juice of 1/2 lemon

- Cook the peas in boiling salted water (1 minute for frozen, 5 minutes for fresh), then drain and refresh. Blanch beans in boiling water for 1 minute, then drain and refresh. Cook potatoes in boiling salted water until tender.
- Place oil in a large pan over medium heat. Add garlic and lemon juice, season with salt and pepper, and add vegetables.
- Toss to just warm through, then serve.
