Pear, Blue Cheese And Roast Beef Salad Ingredients (serves 4)

  • Leaves from 2-3 heads baby cos lettuce (larger leaves torn)
  • 2 pears (such as William), cut into thin wedges
  • 2/3 cup pecans, toasted and roughly chopped
  • 325g thinly sliced rare roast beef*
  • Blue cheese dressing

  • 2/3 cup (160ml) thin cream
  • 2 tbs lemon juice
  • 1 tbs olive oil
  • 2/3 cup (100g) crumbled hard blue cheese

Pear, Blue Cheese And Roast Beef Salad Cooking Instructions

  1. For the dressing, whisk together cream, lemon juice and oil. Stir in cheese, being careful not to break up too much.
  2. Divide lettuce among 4 large shallow bowls. Top with pear, pecans and roast beef, then drizzle over the dressing.
