Pear, Blue Cheese And Roast Beef Salad Ingredients (serves 4)
- Leaves from 2-3 heads baby cos lettuce (larger leaves torn)
- 2 pears (such as William), cut into thin wedges
- 2/3 cup pecans, toasted and roughly chopped
- 325g thinly sliced rare roast beef*
Blue cheese dressing
- 2/3 cup (160ml) thin cream
- 2 tbs lemon juice
- 1 tbs olive oil
- 2/3 cup (100g) crumbled hard blue cheese
Pear, Blue Cheese And Roast Beef Salad Cooking Instructions
- For the dressing, whisk together cream, lemon juice and oil. Stir in cheese, being careful not to break up too much.
- Divide lettuce among 4 large shallow bowls. Top with pear, pecans and roast beef, then drizzle over the dressing.
